A special fruit cake  in a wreath mould steeped in rum and cherry brandy and  decorated with glace  fruits and toasted marzipan.

Black Russian Cake

A dark Chocolate cake steeped in vodka and Kahlúa, definitely an 'evening' stay at home cake due to the alcohol content. Can be served as a cake or dessert

Bûche de Noël

My version of a classic chocolate log.

Chocolate sponge rolled with a chocolate buttercream & Griottine® Cherries (cherries soaked in kirsch). Finished with a chocolate glaçage 

 & cerisettes.

Christmas Stollen

A yeasted cake  enriched with butter, dried fruit, and almonds rolled with marzipan and  dusted with icing sugar

Panforte

A traditional  Italian Christmas cake rich, decadent, and extravagantly spiced.  It is similar to a florentine but much thicker and spicier, a cross between a cake and a fudge packed with nuts and citrus flavours. My version has the addition of cocoa powder to make it less sweet.

Pistachio  sponge with  layers of chocolate and raspberry mousse.

Passionfruit Cheesecake (F)

A richy baked cheesecake flavoured with passionfruit.

Apple and Blackberry Frangipane Tart(V,F)

Delious lemon scented frangipane topped with sliced apples and studded with blackberries, baked until golden

Paris Brest (V)

A light  choux pastry ring filled with a crunchy praline filling

Merlyn Trifle (V)

A stunning trifle  with boozy Merlyn (similar to Baileys), drizzled over  chocolate sponge with layers of chocolate and merlyn custard and whipped cream.

Quince and Mascarpone Trifle(V)

A delicious new dessert which I made recently. An unusual and extra special dessert for Christmas Day. Slow roasted quince with marsala soaked sponge, topped with  spiced  custard and mascarpone cream, sprinkled with crushed pistachios
